Parmesan Crusted Pork Chops (and Honey Butter Rolls)

So, other than bacon, I’ve never made pork before. I’ve also always said that I don’t like much pork either (again, other than bacon and also honey baked ham at the holidays) because growing up when I would eat pork chops they would always be really dry. The other weekend on Food Network there was a healthy/spa-like theme and many of the hosts made pork and fish dishes. Well, since I’m terrified to try fish after not liking popcorn chicken, I realized that I could, and should, start adding more pork to my meal plans. I’ve always felt bad for my husband because I cook a lot of chicken and he’s not the world’s biggest chicken fan.

Being the big Giada fan that I am, I perused her recipe collection online and found a great sounding porkchop recipe. It’s coated with a little cheese so that does take away some of the health benefits but at least it’s a start!

Parmesan Crusted Pork Chops
Ingredients
– 2 large eggs
– 1 c. Italian bread crumbs (dried)
– 3/4 c. freshly grated parmesan cheese (I used 1/2 c. three cheese blend from Stella because that’s all I had!)
– 4 pork chops
– EVOO
– lemon wedges for serving (I omitted because it was a random Monday dinner and DH wouldn’t even notice!)
Directions
– Heat oil in large skillet over medium high heat
– Whisk eggs in pie plate to blend
– Put breadcrumbs in another pie plate
– Place Cheese in 3rd pie plate
– Coat the chops completely with cheese, patting to adhere
– Dip the chops in eggs
– Coat with breadcrumbs completely, patting to adhere
– Add pork chops to skillet, in batches if necessary, and cook until golden brown and temp. reaches 150 degrees, apprx. 6-minutes per side
– Transfer to plate and serve

Honey Butter Rolls
To go with the pork chops I thought something kinda sweet, but not overly sweet. I had some prepackaged rolls in the freezer (I almost always do because you never know!) and thought that rolls and honey sounded good. Rather that have the honey and butter out on the table I decided to coat the rolls in a melted honey butter. Super simple, quick and yummy!
Ingredients
– Rolls (fresh, frozen, homemade, whatever you want/have!)
– 2 Tablespoons butter or margarine
– desired amount of honey (I maybe used 3/4 tablespoon)
Directions
– Melt butter
– stir in honey
– baste butter mixture on rolls
– bake rolls per regular instructions (on packaging, recipe, etc.)
(for extra honey-buttery, save the extra butter mixture and dab in split roll before eating!)
