Quickest Dinner Ever – Chicken Quesadilla’s

Whenever I buy a Rotisserie Chicken I generally make Chicken Quesadilla’s. I’ve never blogged it because it doesn’t seem much like a recipe but for a novice cooker, or a kitchen inept husband, this makes a delicious quick snacky type meal…. For us they’re perfect to make when we only have about 10 minutes to make dinner because we have a busy night ahead of us (I made these the night “The Dark Knight” came out because we wanted to watch it but since it’s not a short movie I wanted a quick dinner so it was 30 minutes from cooking to eating to clean up essentially!)

Chicken Quesadilla’s

Ingredients
Flour Tortilla Shells
Shredded Chicken, cooked
Taco Blend Cheese
Taco Seasoning (or your own blend of spices such as: Cumin, Cayanne Pepper, Garlic Powder and Chili Powder)
a little bit of butter

Directions
– Sprinkle desired amount of taco seasoning on shredded chicken and mix well to flavor the chicken
– Heat some butter in a non-stick skillet (med. – med. high heat)
– Take a flour tortilla and top with desired amount of chicken and cheese (I like mine cheesy!)
– Top with another tortilla
– Carefully place in hot skillet and cook for about 2-4 minutes per side, until golden brown and cheese is melted and chicken is heated through
– Repeat with remaining tortillas until you make the desired amount
– Cut in to 1/4s or 1/6s
** we eat ours plain but you could serve with salsa, quac, sour cream, etc.
** to add more depth of flavor you could add sweated onions and peppers before heating the quesadillas
