Grown-Up Grilled Cheese
4 slices of any Artisan bread (in this picture I used a Country Miche from Panera Bread)
2 slices Sharp Cheddar Cheese
2 slices Provolone Cheese
2 slices Colby-Jack Cheese
4-6 slices bacon, cooked
2 tablespoon unsalted butter, softened
1 tablespoon grated Parmesan cheese
1 tablespoon minced fresh parsley
Heat a griddle or large skillet over medium-low heat.
Combine butter, Parmesan cheese and chopped parsley in a small bowl.
Place the cheese slices and bacon over one bread slice and top with the remaining slice, pressing down gently to set.
Brush the sandwich tops completely with 1/4 the butter mixture, each. Place the buttered sides of the sandwiches down on the skillet or griddle. Brush the remaining sides of each sandwich completely with remaining butter mixture. Cook until crisp and deep golden brown, about 5 minutes per side, flipping sandwiches back to the first side to re-heat and crisp, about 15-seconds. Serve hot.
